Is a potato a healthy choice with dinner?

Recently, I was just on a great fitness program and healthy diet to burn fat. For my fitness program, I do cardio every day and lift weights 4 days a week. I started this on Sunday 25 May. I weighed exactly one week later (Sunday, 1. June) and was 2.5kg lighter. yay:) However, I am aware that may affect the weight lifting, what the scale says, but I know it will not affect to rationalize and fat burning. But my real concern: I'm doing some pretty intense excercising and I will not blow up or blow my entire diet of unknowingly eat the wrong thing. I eat 5 small meals per day (dinner is usually the largest), it ranges from chicken, turkey, fruit, vegetables, egg whites, oatmeal, for dinner, etc. I do have a chicken breast, vegetables, and a medium baked potato (without coating. What I want to know is that it is loaded with starch and carbohydrates, I'm sure with the baked potato?
